(makes 6 servings)
- 1-1/2 c. sugar
- 1 egg
- 1/2 c. water
- 1/4 tsp. salt
- 2 c. milk
- 1 qt. thin cream
- 2 Tb. flour
- 1 Tb. vanilla
Caramelize 1/2 of the sugar and add the water.
Cook to a sirup. Prepare a custard with the milk, remaining sugar, flour, egg, and salt. Remove from the heat, add the caramel and the cream, strain, add the vanilla, cool, and freeze.
